Polenta gives this vegan gluten-free cake its rich colour, while the apples make it beautifully moist.
Ingredients
- 5 large apples
- 2 lemons
- 200g Pure Vegan spread
- 100g golden caster sugar
- 100g soft brown sugar – sieved to remove lumps
- 8 teaspoons No Egg plus made up as per packet instructions but with soya milk instead of water
- 100g fine polenta (fine cornmeal)
- 140g Doves Farm self-raising flour

(This cake goes very nicely with Swedish Glace vegan ice cream or Alpro vegan custard)
Heat oven to 160C for fan oven – use the middle shelf
1- Butter a round shallow pie dish. If you are using a different spread you may need to line your dish with baking paper with spread on both sides – as Pure has great non stick properties baking paper was not needed
2- Peel and slice the apples (save 1 for grating) until you have enough to cover the bottom of the pie dish and place the slices neatly in the bottom of the dish. (It is a good idea to use lemon juice as you cut the apples as it stops them from going brown). Grate the saved apple.
3- In a mixing bowl, soften the spread and add the sugars. Mix well before adding the no-egg and the soya milk
4- Add the polenta and the grated apple to the bowl and mix again
5- Finally add the self raising flour – the flour will start reacting once it is added so do not over-mix or leave out longer than needed
6- Cover the sliced apples with the mix
7- Bake for about 25 minutes (longer for a non fan oven) until golden and risen. The cake should shrink away from the sides of the dish and feel springy. You can do the cocktail stick test (Prick to see if it comes out clean) if you are not sure it is done. Once cooked, remove from the oven and allow to cool.
8- Once cooled use a knife to unstick the edges, place the serving plate (or cake stand) on top of the pie dish and flip the dish and plate over – the cake should come out in one piece with a little shaking and persuasion
This cake is worth making the day before, as it tastes even better after being chilled. It makes the apples taste even more soft and fruity…
Serve with Swedish Glace vegan ice cream or some Alpro vegan custard.
